Cream Cheese Pancakes

My friend told me about these years ago, and I rarely remember to make them. However, I was getting a little tired of my veggie omelets lately, so I figured I'd whip up a batch of these babies. I just did a quick internet search for "cream cheese pancakes", and I was able to locate the recipe here.

All you need is 2 ounces of cream cheese (preferably warmed up in the microwave for about 15 seconds to make it easier to stir), 2 eggs, 1 packet of Stevia (or any other sweetener), and a dash of cinnamon.

Place all the ingredients in the blender, mix together for at least 10 seconds, and then cook as you would regular pancakes -- pouring only a little of the batter into a lightly greased pan on medium heat, and flip after a few minutes.

You can then add some sugar-free maple syrup or even some berries on top.

These babies taste just as good (if not better) than regular pancakes.
