Bacon-Wrapped Avocado

You guys! I thought I posted this recipe a while back, but apparently I didn't! Y'all know how I love to wrap just about anything in bacon (salmon, asparagus, steak, cantaloupe, etc.) so I set about finding a way to cook bacon-wrapped avocado. I found this recipe on a Paleo website, but I decided to tweak it a bit, since I'm not the biggest fan of chili powder (or anything remotely spicy, at that). These turned out pretty well, and I *may* or *may not* have been eating them for dinner every night this past week. Hey, use what works, right?
 
You know I like things nice and simple, so this worked out pretty well for me. I preheated my oven to 425 degrees beforehand and covered a baking sheet with tin foil. I then began slicing up a medium sized avocado (the thicker the avocado the easier it is to wrap the bacon around without overlapping), lightly salted the slices, and then rolled them up with uncooked bacon. Now the trick here is to make sure as much of the bacon is exposed as possible, so that it cooks thoroughly. If you need to, you can use toothpicks to hold the bacon in place, but after making this recipe several times I haven't had a problem with the bacon staying put while it cooks.
 
Just toss those bad boys in the oven for about 25-30 minutes, and you've got yourself a winner.
